Kalimera! Summer calls for dinner in a dash aka grilled chicken pita pockets. My grill does all the work and I get all the credit, score! That was like today. The store did all the work and I got to enjoy my hubby, baby and her brother and our friends that celebrated with us. I write this one-finger-style in the aftermath of my 1-year old’s birthday celebration. There is much joy!
It was a glorious park day. We ate, we played and played. Both kids were so very dirty from playing so hard and that made me so very happy. The unsung hero of today, my husband who let’s me plan fun parties and trusts me. He works so hard and I get to enjoy wonderful days like this because of his hard work. (Thank you babe.) He’s a legend and I love him.
This my friends, a week night dinner. Simple, quick and something you may need to do after a long day to keep special moments alive in the busyness of life. I love cooking but people matter. There’s you and me behind the stove so remember to smell the roses and keep it simple sometimes and love people.
Grilled chicken pita pockets
Grilled chicken pita pockets, Greek style easy week night dinner

Serves: 4-6
Ingredients
- 1 pound chicken cutlets
- 3-4 tablespoons olive oil
- 1 tablespoon lemon juice
- Chili lime seasoning (mild in flavor)
- ½ cucumber
- 10-12 grape tomatoes or cherry tomatoes
- 6-8 romaine lettuce leaves shredded
- ½ cup greek yogurt
- ½ teaspoon dill
Instructions
- Grill the chicken on medium to high heat for 3-4 minutes each side.
- Cube the meat into small bite sized pieces
- Cut pita pockets in half
- Wash and quarter the tomatoes.
- Slice and cut the cucumber slices into quarters
- Stuff the pita pocket half full with some of the lettuce, tomatoes and cucumbers.
- Add a teaspoon of the dill to the yogurt and mix.
- Fill the pocket with chicken and then top with another teaspoon of dill and yogurt mix.
