Easy adobo skillet chicken with a little heat and a splash of coconut cream.

  • 1-3 adobo chillies (1=mild, 2=medium, 3=medium to hot)
  • 4 tablespoons avocado oil (2 for cooking the chicken and 2 for the paste)
  • 2 cloves minced garlic
  • ½ small white onion cut into chunks
  • ¼ cup coconut milk
  • 1 pound of chicken cutlets
  1. Place all the ingredients into a food processor and process to combine into a paste
  2. Meanwhile heat 2 tablespoons of avocado oil in a skillet on medium heat.
  3. Brown the chicken slightly on each side.
  4. Once browned add the paste to the pan and coat the chicken.
  5. Add the coconut milk and then combine with the coated chicken.
  6. Try to distribute the chicken and the coconut milk evenly over the pan.
  7. Cook for another 5-7 minutes each side.
