What makes you come alive? For me it’s worship, family time, vacations, dancing, a good coffee and the sharing of hearts. It’s been a season of just appreciating my loved ones, being thankful for simple things and so many blessings.
All this deep stuff with hummus? My friend has had brain surgery, another friend is with her sister awaiting a heart transplant. Circumstances are screaming LIFE IS PRECIOUS. Take time to love people. Write that note, choose kind words. Give those flowers and move beyond intention.
Take care of you (preaching to myself here). Be the best version of yourself. Make things you love that nuture your body. Make healthy swaps in your food choices. Eat green things every chance you get. Eat mostly plants and drink water, lots of it. I really battle with this, especially in the winter. Side note, it’s not winter for ever and there is beauty in the seasons, here’s proof.
Warning: You have to ward off double dipper toddlers with this hummus. It get’s better in the fridge overnight if you’ve managed to not eat it in one sitting. High in fiber, minerals and protein, what are you waiting for?
- 2 16oz cans of northern beans drained
- 1 teaspoon of baking soda
- Water to cover the beans
- 2 cloves of garlic
- 3 tablespoons of fresh lemon juice
- ½ cup of tahini
- 10-12 large basil leaves
- ½ cup olive oil and 2 tablespoons
- 1 tablespoon za'atar spice
- 2 tablespoons of olive oil.
- 1 teaspoon of salt
- Black pepper to taste
- Drain the beans and place them in a large saucepan.
- Add the baking soda by sprinkling into the saucepan. Stir to combine well and evenly.
- Add water to cover the beans and cook on a medium heat for 20 minutes. This softens the skins of the beans to get that silken texture.
- Drain after cooking for 20 minutes using a sieve.
- Place beans into a food processor with the garlic,lemon juice, tahini, basil, salt and pepper.
- Pulse in the food processor until smooth and creamy. You may need to stir halfway to lift any stray beans into the mixture.
- Once combined and smooth place into a serving bowl.
- Add the olive oil on top and garnish with one tablespoon of za'atar spice
